Chokecherry is a shrub or small tree with smooth reddish-brown bark. It can be found throughout the canyons in the Wasatch mountains. The blossoms are white with yellow stamens. The fruit, which resembles small cherries, is red, turning black at maturity. It has a pleasant, bitter, astringent flavor, that is popular in jelly or a syrupy juice. Look for it in the canyons as you take an afternoon drive.
