My peaches aren't quite ripe for canning. How can i ripen them more. Should I put them outside in the sun or just leave them on the counter?

They taste better is you let them ripen on the tree.  If you already picked them, you might try a clean brown paper bag and fold the top down lay it sideways, use a clothespin to hold the ends together.  They will create a gas, it may take a day or 2 laying on your countertop out of the sun.
