Cut into small pieces (I remove the skin). - do not wash after removing the skin, place in air tight freezer bags and remove air - freeze. If you do not cut into smaller pieces you will find it difficult to cut when removed from the freezer. I use large bags and remove what I need for cooking and reseal the bag and return to the freezer. I also do not defrost for use in baking as the rhubarb will be mushy.
