How or when should I pick my plums?

My Plums are just starting to  ripen.  The birds are pecking at them but not eating any. I would like to share with my neighbors, but do not know when the best time to pick them is.

You might have to take them off soon and let them ripen on your porch....too many pecks from birds then other insects get inside.  You did not mention your state....we live in NE PA......ours are still growing and very green yet.
