They should be red for regular tomatoe, orange for low acid or green ones to make green fried tomatoes.

Recipe for green fried tomatoes.....can also be red/green/orange...............

pick, wash & dry tomatoe.....................cut  slices and dip in white flour, then egg.wash/milk mix..............then into bread crumbs...or corn meal.......I like to use a caste iron pan...........put some olive or or oil of your choice in the pan and heat the oil first..........carefully put the breaded tomatoe in and fry both sides..........put them onto papertowels to drain.............pat the top with papertowels...................if you use salt & pepper put it into the egg mix.

there is another recipe for red tomatoes. pick, wash & dry.............slice, dip into flour and fry in caste iron pan with a little butter cook both sides well, take them out and drain on paper towels.  when you finish the last ones and take them out put about a cup of milk to make a milk gravy.  Add a touch of salt & pepper & thicken it and then put the cooked tomatoes on the plate on put some milk gravy on top.  We ate them for breakfast in August when the tomatoes were plentyful.  Happy summer.
