When and how do I harvest Sekel and Bartlett pears?

I live in Central Massachusetts. I am confused as to the proper harvesting of my Sekel and Bartlett pears.Also, am getting conflicting information on pruning them. Can anyone enlighten me on this?

We live in South Carolina and our pears are ripe now.  My brother in law shakes the limbs and the ripe pears fall to the ground.  Then we just have to pick them up.  Try shaking the limbs and see if any fall off.  He says that they need to be pruned back after they bear fruit but he didn't say how much.
