Because of our weather in Harrison, AR, my husband was not able to put our garden in until May of this year.

When can we tell the beets are ready to pull?

So easy to tell, as soon as a bit of the beet starts to show above the soil, it looks a bit dry and stays above soil level,,,,pull them out!! You can leave them in longer, they will only grow larger. Picking them too young isn't a big deal either, they are just small and will cook faster!

Some gardeners like baby beets, they are much sweeter than big beets.  They might be a month later than usual because of a later planting but check one and see what they look like.
